Miscellaneous New Old Stock Knives
Over a period of many years Thiers-Issard has acquired the assets of various other knife makers in Thiers that have closed. Besides the selection of old stock knives from Sabatier Jeune, we also have old stock knives from various sources. Some of these knives were made by Thiers-Issard and are just left overs and others are knives acquired over the years. All of them are made in Thiers and none of them are recent production, although it can be quite hard to date them accurately.
Stainless steel cutlery is certainly more care free, but nothing can match the edge retention and ease of sharpening of fine carbon steel knives like some of these fine old French knives. Of course, if you neglect carbon steel knives they will rust. Carbon Steel knives have an amazing ability to keep a sharp edge. Over time, carbon steel knives will develop a pleasing patina. This is a unique opportunity to own French chefs' knives of historical interest.
