Sabatier Carbon Steel Knives
Thiers-Issard have been hand-crafting knives in Thiers France, under the Sabatier brand with the **** Elephant logo, since the 19th Century. Once all fine cutlery was made from carbon steel. Today most kitchen knives are stainless steel, but Sabatier still offers a fine selection of traditional French chefs knives in carbon steel. Stainless steel cutlery is certainly more care free, but nothing can match the edge retention and ease of sharpening of fine carbon steel knives like these from Sabatier. Of course, if you neglect carbon steel knives they will rust and be ruined.
Sabatier knives are forged out of a single piece of steel. All Sabatier knives but the nogent knives have a full length integral tang and bolster with traditional riveted handles, providing the perfect balance and alignment needed for comfortable all day use. Of course Sabatier carbon steel knives require a more care than stainless steel, but these Sabatier knives will give you unmatched performace and longevity in return. Over time, Sabatier carbon steel chefs' knives will develop a pleasing patina.
The Thiers-Issard Sabatier carbon steel knives on this page represent the full range of Thiers-Issard Sabatier new production carbon steel knives. We also offer Thiers-Issard Sabatier historical carbon steel knives, which are knives that have been newly ground and handled, from left over pre Second World War forgings. The new production Thiers-Issard Sabatier knives seen on this page are available with three handles, a red stamina handle, which is an epoxy impregnated wood that simulates rosewood, blackwood and solid olive wood. The red stamina handles are more water resistant and require less care than the olive wood and blackwood handles, but it would be hard to imagine a more beautiful traditional handle than the olive wood ones. The olive wood handles should be rubbed with olive oil occasionally to keep them looking their best. Never leave the wood handles submerged in water and allow to air dry after being hand washed. Never put one of these knives, or any of the fine knives that we offer, in a dishwasher.

Please Note: Thiers-Issard carbon steel knives are a specialty product which are hand-made in France. Unlike all of the other knives that we sell, these knives are prone to significant irregularities. Sighting down the blades of these knives, they will typically not be perfectly straight. This will be particularly noticeable on the longer knives. Blades will often have a gentle curvature to one side, and or a gentle wave in the blade. This is a result both of being hand-ground and of the inherent instability of carbon-steel during the heat treating process. These knives are more akin to pre-War hand-made knives than they are to modern factory made knives, and should be evaluated in that light. Any knives that exhibit flaws that we consider to be outside of the normal range are segregated out and sold on our knife specials page. Some are occasionally mis-marked with "Inox" (stainless steel) even though they are carbon steel. In short, if you are the type of person who expects perfection, you will probably not be happy with a Thiers-Issard knife. However, if you are a person who likes old-school knives, and values the properties of carbon steel, then you will probably love these knives.
